MethodPreparación
- Fill a big pot halfway with water and set it over low-medium heat. As the water heats up, add the sago pearls, stirring as you pour them in so they don't clump. Give everything a good stir.
- Let the sago cook for about 20 minutes, stirring now and then.
- Turn off the heat and let the pearls sit in the hot water for another 15 minutes, until they're translucent with no white dot in the center.
- Drain the sago in a strainer and rinse it well under cold water, until all the sticky, gooey starch washes away.
- In a big bowl, stir together the sago, coconut jelly, evaporated milk, and condensed milk — start with half the can and add more to taste.
- Fold in most of the diced mango, then chill. Serve cold with extra mango spooned on top.
